Asian Inspired Marinated Chicken with Fried Rice

This is one of my husband's most favorite dishes - mine too! The chicken is perfectly spicy and juicy, with those amazing notes of toasted sesame seed and ginger. The rice is a spot-on dupe for your favorite local Chinese food joint! I was VERY surprised because we have the staple restaurant that we order from every weekend without fail, but I'm thinking they might have to wait a little longer for us to return with this recipe!


Asian Inspired Marinated Chicken

4 chicken breasts - cut into halves
2 tbsp sesame oil
1/4-1/2 cup reduced-sodium soy sauce (whichever works best to cover your chicken)
Dash of Rice Vinegar
1/2 tsp ground ginger
1/2 tsp garlic powder
1-2 tsp Sambal Oelek, more or less to your taste
Marinate chicken breasts for 4 hours. Bake at 375 degrees until done.

**I always reserve a little of the marinade for basting prior to placing the chicken in the bag, basting about halfway through the cooking process!

Quick Fried Rice

4 cups Cooked Rice 
4 eggs, scrambled
Soy Sauce, judge this based on your tastes
2 tsp Sesame Oil
1/2 Onion, finely chopped
1 - 1 1/2 cups FROZEN carrots and peas
**I actually prefer to use the frozen carrots and peas for this! You can use whatever veggies you like though!

Scramble eggs in a wok or saute pan. Remove eggs from pan and set to the side. Add onion and cook until translucent, about 5 minutes. Add in carrot and peas, cooking for about 2 minutes before adding back in the egg. Add in cooked rice (day old rice works the *best* but I have also made this with fresh rice! You just need to be more careful not to break up the rice grain when using fresh rice). Add in sesame oil and soy sauce, garnish with green onion. Serve immediately! 

This is such a delicious and quick dinner that the whole family will enjoy!
